Dry Ingredients
1C molasses
1 ½ tsp xanthum gum
3 C gluten-free baking flour (I use Bob’s Red Mill Baking Flour Mix)
2 tsp baking soda
1tsp salt
1 TBS cinnamon powder
1 TBS dried ginger powder
1 tsp nutmeg
½ tsp mace
½ tsp ground cloves
1 tsp baking powder
½ tsp stevia
Wet Ingredients
1/2c apple cider or apple sauce
¾ C shortening
3 eggs, beaten
2 C fresh pumpkin, cooked and mashed ( I cheat and used canned, sugar-free pumpkin)
2 tsp vanilla extract
Preheat oven to 350 F degrees. Grease two 9x5x3-inch loaf pans, or one 13.5x5x4-inch pan. BLEND the molasses, shortening, and xanthum gum. Add vanilla, apple cider, eggs, and pumpkin. MIX (in a separate bowl) all the dry ingredients. Add the pumpkin mixture. MIX well and pour into bread pans. Bake for 45 minutes. Test for doneness with a toothpick. Remove from pans and enjoy!
