Quinoa Tabouleh


  • ½ c quinoa
  • 1 ¼ c water
  • ½ c cherry or grape tomatoes, halved
  • ½ cucumber, diced
  • 1 c fresh spinach*, chopped
  • ¼ c fresh parsley**, chopped
  • ¼ c fresh mint, chopped
  • ¼ c lemon juice
  • 2 cloves of garlic, minced
  • 1/3 c olive oil

Add quinoa to boiling water and reduce to a simmer.  Simmer for approximately 15 minutes.  Allow to cool, then toss with the remaining ingredients.  Best chilled.

*You can substitute other greens for the spinach such as arugula, watercress or kale.**Flat leaf parsley, sometimes called Italian parsley, is best for cooking.
