Quinoa Tabouleh
- ½ c quinoa
- 1 ¼ c water
- ½ c cherry or grape tomatoes, halved
- ½ cucumber, diced
- 1 c fresh spinach*, chopped
- ¼ c fresh parsley**, chopped
- ¼ c fresh mint, chopped
- ¼ c lemon juice
- 2 cloves of garlic, minced
- 1/3 c olive oil
Add quinoa to boiling water and reduce to a simmer. Simmer for approximately 15 minutes. Allow to cool, then toss with the remaining ingredients. Best chilled.
*You can substitute other greens for the spinach such as arugula, watercress or kale.**Flat leaf parsley, sometimes called Italian parsley, is best for cooking.
