Tuna and Quinoa Salad
1/2 cup cooked quinoa
1 6-ounce can chunk light tuna packed in water, rinsed, drained, and flaked
1/4 cup cherry tomato
1/4 cup finely chopped Italian parsley
1/4 cup finely chopped Italian parsley
1/8 cup chopped walnuts
1 tablespoon fresh lemon juice
1/2 tablespoon extra-virgin olive oil
1/4 teaspoon kosher salt
Pinch of coarsely ground black pepper
In a large bowl, combine all ingredients, and mix gently to combine.
