Anti-inflammatory Salad with Pine Nuts and Dijon Dressing
Anti-Inflammatory Salad
2 bunches watercress, stems removed
2 heads Belgium endive
1 head radicchio or 1/4 head red cabbage, finely shredded
1 small onion, thinly sliced
2 tablespoons crispy pine nuts (see below)
3/4 cup Bragg’s Apple Cider Vinegar

Creamy Dill Dressing
1/3 c plain kefir
1 tsp shallot, minced
½ tsp lemon juice
2 tsp fresh dill, minced
In a small bowl, whisk all ingredients together.
Basic Un-Vinaigrette
¼ c lemon juice
¼ c water
½ T Dijon mustard
¼ tsp dried basil
Black pepper, to taste
¼ c olive oil
Whisk the first 5 ingredients together (or put in a jar and shake.) Add the olive oil and whisk (or shake) vigorously.
Ginger Lime Dressing
¼ c lime juice
1 tsp fresh ginger
½ tsp toasted sesame oil
¼ c olive oil
Dash of hot chili sauce, to taste
Combine all ingredients in a blender and blend until smooth
Ginger and Mango Dressing
1 T fresh ginger, minced
½ Mango, peeled and chopped (frozen is fine, just allow to thaw)
½ c coconut water*
Place all ingredients in the blender and blend until smooth.
*You can use coconut milk instead, but you will need to use less and thin it with water.
Tahini Mint Dressing
6 Tbsp tahini
Juice of 1 lemon
½ c water
1 Tbsp fresh mint, chopped
Dash of tamari
Mix all ingredients together in a blender or whisk together. If it is too thick, add a little more water.
Pumpkin Seed Dressing
5 Tbsp Olive oil
2 Tbsp Lemon juice
½ c pumpkin seeds
2 tsp tamari
5 Tbsp water
Mix all ingredients together in a blender until smooth. Add more water if too thick.
*this recipes is also great with sunflower seeds or sesame seeds.
