Preheat oven to 350. Grease muffin tin with olive oil (or coconut oil)

In a medium bowl, mix:

  • 1/3 c coconut flour
  • 1/4 c almond flour
  • 2 scoops protein powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp allspice
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg

In a separate large bowl, mix:

  • 2 beaten eggs
  • 1 can (15 oz) organic pumpkin puree

Add the dry ingredients to the wet and combine well. Put into muffin tins and bake at 350 for 15-20 min. Let cool about 5 min. Take out of muffin tins. Cool and store in fridge.
